    Kimchi!

    Just moved 3 qts of kimchi from the fermenter to jars. I didn't even what it was a year ago, now I have some almost daily with lunch. This batch was fermented for six days, a bit longer than usual since the house has been colder lately. Smells wonderfully powerful.

    When to take pH sample in a decoction mash?

    I made another Czech pilsner last week, and didn't measure the mash pH because I didn't know at what rest to take the sample. In an infusion mash I'll sample 15 minutes after dough-in, but I'm sure that's not correct for a triple decoction mash. I haven't found the answer in any of my reference...

    Beer gas in CO2 cylinder?

    I was about to purchase a used nitrogen regulator from a member here, but was told by my LHBS that the local welding supply shop exchanges beer gas in CO2 cylinders. So I'd need to use a CO2 regulator. I hadn't heard of this before. Anybody here using CO2 cylinders for beer gas?

    optimal CFC flow direction?

    I understand that wort and water flow opposite directions in a CFC. But is cooling more efficient when the wort enters at the bottom of the coil, and the water at the top, or vice-versa? Does it matter at all?

    I am thinking about making a small fermentation chamber for starters, just a simple heated wooden box. I'd prefer an acrylic door, but maybe light is an issue? Or maybe doesn't matter for starters? FWIW, I always decant starters.

    How fast to cold crash?

    John Palmer writes that cooling faster than 2 deg F per day can stress the yeast and cause off flavors. My weisbock is at 65F right now and ready to crash, but I'd rather not spend 17 days getting it down to 30F unless it really makes a difference. How fast do you crash your beer?

    Oxygen cylinder caddy

    I finally made a caddy for my disposable oxygen bottles. It's made of 3/8" hardwood plywood. Pretty quick project with a 3" diameter hole saw and a table saw. Now I can open the valve and adjust the flow rate with one hand, and no more capsizing the whole thing.
