    Optimum Conditioning Time

I've been bottling beer for a while now with generally good results. The general rule I follow each time is that I wait a minimum of 2 weeks for the beers to carb and obviously condition. However, because I'm impatient and thirsty and start drinking on day 14. In the first early bottles, I...

Odds and Ends - What Should I Do?

After my first full year of brewing, I now have a lot of different speciality grains and hops left over. Looking through a bunch of recipes, I don't seem to have enough of one thing or another for a complete recipe....what do I do at this stage? Thanks for your suggestions!

    Is this an infection?

I've never had an infected batch before....could this be my first? I did forget to sterilize my wort chiller before using it, so that's what has me worried. Note: I did dry hop, so I'm not sure if it's just hops on the surface. Please tell me....toss or save? Thanks.

Need More Water, Not Enough Kettle!

Hello All, Normally I brew small 4gal batches (BIAB) in my 8gal kettle - because of the smaller batch size, I can comfortably fill enough water in my kettle + grain bill without it all overflowing for the mash. Tomorrow, I want to aim for my first 5gal batch and after running the calculations...

Lager Fermentation - What to Expect?

I've just brewed my first Lager and placed in my chest freezer at 54°f. Now...what should I expect to see with the airlock? Will it eventually bubble as vigerously as a beer, or will it bubble very slowly? And how long should it take before it does begin to bubble and pop? Thanks!

Lager Fermentation - What is Normal?

I've just brewed my first Lager and placed in my chest freezer at 54°f. Now...what should I expect to see with the airlock? Will it evetually bubble as vigerously as a beer, or will it bubble very slowly? And how long should it take before it does begin to bubble and pop? Thanks!

First Lager - Is a Starter Required?

About to brew my first Lager this weekend...very excited! I normally make small batches of beer of about 4gals and never make a starter. I'll be making my usual 4gals of lager. Do I need to make a starter for lager, or can simply pitch my yeast as normal? Thanks!

    Mash Liquor Volume

Does it matter if I mash with the required volume of water for the boil or should I mash with a reduce volume of liquid first, and then top up to the required amount pre-boil? Thanks

Yeast Suspension - It Won't Settle

I brewed a Northern Brown Ale weeks ago...it's been racked and sat in my cold cellar for approx 3 weeks now. I've attempted to drink a couple of bottles which had sat in my fridge for a couple of days... The beer has a dominating yeast taste which isn't pleasent...it's super cloudy with the...

Brewing my 3rd brew today - Cream Ale. OG target: 1.055 Actual: 1.044 Should I be concerned? What action could I take to raise the OG? Thanks Lee

    Fermentation Time

Hello all, Fermentation time...is it as simple as just leaving it two weeks by default or should I be adopting a better practice of taking a FG measurement throughout out the two weeks as a real measure of fermentation being complete? I'm curious, because can fermentation be fully complete in...

Bits and Pieces - What to do?

After a couple of small batch brews, I've started to amass a random collection of grains and hops. What does everyone do with their odds and ends? I've never made a custom recipe...but is it even conceivable to dump the lot into the brew pot and see what you make? lol Thanks all!

    Priming Calculator - Temperature

I'm about to rack my first bottles of beer...very excited! Quick question about the temperature selection within the priming calculator... I cold crashed my beer... currently sat at around 34°F. Is that the temperature I should use within the priming calculator or do I add the expected...

Belgian Whitbier- Cold Crash or Not?

Hi all, After reading through the forums, there's some people that say crash regardless...then others that argue that wheat beer is if couse supposed to be cloudy....don't crash. So....whats a guy supposed to do? Thanks for your thoughts. Lee

    Should I be Concerned?

Hi all, So I'm going through my first ever brew... currently fermenting in my basement since Sunday afternoon. Monday - I see lots of action in the airlock. Tuesday (today) - I see no action in the airlock Should I be concerned? I currently have a heating belt around my ferm bucket...

First Brew Day - Dude, Where's My Beer?

My first ever brew day today - Belgian Witbier (BIAB) Everything went well until I discovered that instead of expected 5.25gal I ended up with just under 4gal. And if I'm using the Brewhouse efficiency calculator - I ended up with a 54% efficiency :( Here's the basics: Started with 6.25gal...

Bottling or Keg System - When Do You Realize It's Time For An Upgrade?

Starting out...I'm committed to brewing my first brews and bottling them. But I'm curious...at what stage does everyone get tired of bottling, and make the investment into a keg system?

    Reducing Recipe Quantity

Hello All, I'm writing this even before I brew my first batch (ever) so go easy on me. I ultimately want to brew smaller batches, approx 2.5 gals. As much as I want (and can) brew the typical 5gal recipes, I just won't be able to drink it all, and I don't want it to go to waste. I also want...
