    The best deal I've ever found was Costco. Their brand, Kirkland?, was 2 gallons for 8.99. 100% organic juice. Hard cider turned out great.

    Kegging Soda

    I don't know. 20psi seems low for soda. I keep mine at 37F and 30psi. I do the quick carb 45psi and shake like crazy, then back it down shake some more, and do this in 5psi increments down to 30. Then let it sit for a day and I'm good to go.

    Sorry, Dave's Dreaded calculator puts it at 9.2%. And I'm not doing the full gallon...about half. I've never done applejack so I figured I'd try it. I'm not expecting more than a sip or two. I'm interested to see how much cinnamon flavor there is.

    Racked it into a bottling bucket. Going to let it settle this afternoon and put it into two 1L swing tops. Might applejack the rest. Someone check my thinking. The oil won't freeze and with the higher alcohol % it should emulsify, or at least infuse, into the applejack. Boom! Cinnamon applejack.
