    picnic are fine for pulled pork. if you don't want to do a whole butt (aka shoulder). Boston butt is a cut from the shoulder too, and smaller than whole butt. You can always cut a butt in half or 1/4 to reduce the size too. However leftover pulled pork is easy to freeze.

    Try cleaning the spark arrester. It is the screen on the muffler outlet, they often clog with soot.

    Dry skin makes for crisper crust. Leave uncovered for 4+ hours in the refrigerator will help, as will a rub heavy in salt. Rubbing oil/fat will help brown it but not help with crunchiness. Keeping it uncovered while roasting/smoking helps too. The higher the heat, the sooner it will crisp too...

    I didn't probe it to find out. I did wrap in foil around the 3.5 hour. I also smoke in the 300-325 range. The first 1/2 inch was defrosted, however the two butts were still frozen together. When I foiled, they had shrunk enough to separate on their own.

    Irma hurricane brought me to Tennessee from Florida.

    not much in pigeon forge. Might want to try Bluetick in Maryville, or one of the other breweries in Knoxville. Better option is to drive over the mountain and hit all the good stuff in Asheville. PS Food City has about the best selection in PF (which isn't saying much).

    My ink bird was spot on temperature wise, however there is settings to change IF your probe is reading off. I am also curious if you have some sort of temperature stratification in the keezer too.
