Be careful when reading about pH with hefes. There's a few curve balls. IE the ferulic acid rest should be carried out higher than mash pH... Same goes with decoction (carried out at higher pH than step).

Wow. Some good info here! While WB06 is NOT the classic banana clove strain it still makes great hefe. I think it is similar to WY3638 and is more complex with fruit.

Keep in mind when pro brewers quote pH figures they might be deliberately? misleading you by not quoting based on room temp like us homebrewers. I suspect 4.5-4.8 is a mash temp figure that would translate to 4.8-5.1 room temp. I definitely think a lower pH would help with the NE IPA...
I really think folks obsess too much about yeast. In 20 years of brewing I find yeast is pretty forgiving. Making the best starter in the world does not guarantee good beer or fix a poorly brewed beer. There are many other things to obsess about that will have a larger affect on your beer...
