    Just got back from Russian River with lots of Pliny, bottled on 12/21. Would like to trade for Heady, Sip of Sunshine or other worthy IPA's not available on the west coast. I'm honest and willing to prove it.

    I didn't look at the best by date to be honest. I trust my supplier not to sell old yeast. I use starters rather than pitching multiple vials.

    I used to make starters a few days before brew day and cold crash/decant but I read somewhere that having a starter go longer than 24 hours is "beating up your yeast." Also learned that high krausen is the ideal time to pitch the starter. That all made sense to me so now that's what I do.

    What is the shortest amount of time I should wait before trying a bottled beer?

    I'm actually thinking I'm going to enter it the pale ale category. The spiced category clearly states the spices should be prominent in the aroma and hops should be in the back seat. My beer is not that. It's Casacde heavy and the coriander and orange peel is subtle at best.
