    I am making this brew and have about 3/4oz of williamette hops left over from another brew. It doesn't call for dry hopping it in the recipe, but I may consider it with these left over hops. Any thoughts? How would it change the beer?

    My experience is obviously very limited but i would take all the "it will be ruined" with a grain of salt. It may not be as good to a professional beer taster, but I bet 99% of people would never know.

    I made a lagunitas IPA clone with peach extract added to the keg. It is awesome and could definitely compete with store bought brews. Not quite as hoppy as I like, but very good which I think the peach hides the hops Things for others I kind of did a swamp bath to keep the temperatures...

    So is the issue the beer could be better at fermenting at a constant 68 degrees? Or is the beer possibly undrinkable now because I couldn't control temp in that range?

    I used White Labs WLP001 California Ale yeast We shall see! Sounds like digital controlled is almost a requirement, especially in Fl summer

    Plus I plan on using peach extract in the corney, so an exact clone doesn't matter.c I just wanted the lagunitas as the base IPA.

    The sticker on the carboy lists 74' but just hope it tastes good for my first go around. Not really that picky its identical, but wanted to make sure my mistakes ipdidnt lead to skunk. I can remove the blow off cap and put a sanitized thermometer in and test? Good idea or not?
