    Harvesting lactic and Brett

I am brewing a Berliner Weiss following a recipe I found here. This recipe has you ferment in 2 batches, one with Lactobacillus Delbrueckii, and the other with Brett, then mixing the two batches together for a final product. I make this beer often, and the yeast is pretty pricey. I would like...

    3-piece airlock question

Hi all, this may be tricky to describe, but I'll try to be clear. I have a 2.5 gallon batch of lactobacillus that has been sitting for about 3 weeks (it is half of a berliner weiss). For some reason I cannot seem to keep sanitizer solution in the airlock, it keeps getting sucked into the...

    Sour mash question

I have a small sour mash going right now that I will be adding to a larger mash to make a berliner weisse. The sour mash is 1.5 lb german pils. It's been mashing for 24 hours and I just checked the temp: it is down to 85. I know it is recommended that you keep the temp above 100, but how bad...

    Brewing now...

I ordered the Northern Brewer Petite Saison all grain kit on a whim. I am disappointed at this recipe Does not meet the minimum Saison original gravity standards. This recipe comes in at 1.040, Well below the 1.055 minimum standard. So I just happened to have some light Belgian candy laying...

Stillwater Artisnal Stateside Saison = Win

Had this last night; great beer. Just the right amount of american hops to make it an american saison, but not overly hoppy. Still hoppier than a typical saison. Also higher alcohol than a typical saison at 6.8%. I really enjoyed this beer. I have Saison all grain kit arriving this week...
