American IPA Dogfish Head 60 Minute Clone (AG) & Extract

I just saw this thread...I was considering doing a version of this out of Clone Brews but it's different...My PM of the CB version calls for 5# Maris Otter, 4 oz Crystal 55, 4 oz British Amber, 5# Muntons XLT DME with Warrior/Simcoe/Amarillo... So mainly Maris Otter rather than American two...

30 qt boil pot for partial mash

I have been doing my PMs in a 20 qt pot with around 5-6 lbs of grain and a 3.5 gal boil with good success. I am considering moving to a 30 qt pot to mash more grain and increase my boil to 6 or so gals as my stove should handle a larger boil. I'm thinking I could go to mashing 9 lb of grain in...

Hoppiness is an IPA conversion to PM question

Are you cutting back on the crystal 15L to round out at 5 lb of grain total per my request of 5 lb? If so I could certainly make it 5.5 of grain... when you use DME at flameout will it mix well or should I boil it until it does... You are always helpful, thanks...

Hoppiness is an IPA conversion to PM question

I am considering this recipe from Brewing Classic Styles...Was thinking about trying to convert it to a PM... The extract recipe calls for 9.75 lb of LME, .5 lb Munich LME, 1 lb crystal 15L, .25 lb crystal 40L, 4 oz hops... Considering that I am using a 5gal brew pot I have mashed and...

    Hefe question

Should I wait for the particles that are dropping from the left over krausen to finish dropping or just rack to the bottling bucket and not worry about it?

    Hefe question

Update...on day 15 I checked the gravity and it was 1.01 so I moved the carboy to a location to maybe bottle in a day or so and the krausen remainder on the top of the beer began to fall in tiny pieces...the airlock started bubbling every 6 secs, but now it's back to not much...wheat beer is...

    Hefe question

Yep, I'll check the gravity...I was more curious about the krausen lingering at 12 days...after researching it appears to be somewhat of a trait with 3068...if it's still there in a couple of days I will move it aside check the gravity and bottle if its ready... My next batch is an oatmeal...

    Hefe question

I have a wheat in the fermenter, it was with DME extract and Wyeast 3068. It was very aggressive at first and settled down in a couple of days and left a mess inside the carboy. Now at 11 days and the airlock has slowed to every couple of minutes. It still has a gummy Krausen on top but I...
