    Wort took forever to cool to pitching temp

    I'm not an expert in thermodynamics, but my instinct tells me that 2 gallons of wort should have cooled down more than 20 degrees overnight. Have you checked your thermometer to see if it was calibrated correctly, it could be that it's off by 20-30 degrees and you pitched at a good temp.

    I made 4 over the Easter weekend using the modified plans. As an FYI, the dimensions of the crate almost require the dividers (or in my case, old beer cartons) without the dividers the bottles are a little too lose for my liking.

    Siphon, wine thief, turkey baster, even ladle if you are a bucket. Just make sure that whatever you use, make sure it's sanitized so you don't infect you wort.

    That would do it. You need to take the reading just prior to adding yeast after you've topped off to 5 gallons. I would guess that your OG would be around 1.040.
