Follow up again for posterity. Had a good second fermentation on the nectarines. Left for 3 months, still had great nectarine flavor. Not sure of final ph, but tastes right in line for a gose. Really enjoying this one, will use again.

Just going to add on top of the info for the sake of it. Transferred to secondary after 2 weeks. Fermented down to 1.008 so no problem with the primary after all. Slight funk in the smell so I know the lacto is doing something, but not much in ph drop from what i can tell from tasting. Went...
