    Yes, I completely agree with you actually. I guess the reason that I called it a kolsch, is because it's based off of my kolsch recipe. I just sub'd GNO in for white wheat malt...and then used completely different hops :D So it STARTED as a kolsch, but now I have no idea what it might be.

    I keep reading about the "nutty" flavor that they have. Is there any craft brew out there that you can think of that uses GNO, or anything that I could try with a similar "nutty" taste? Would this nutty taste be undesirable in a beer hopped with more tropical/sweet hops like bravo and Galaxy?

    Thank you for the correction, yes, I used white wheat malt. And I sort of think that in the end, I won't quite have a kolsch. Maybe something similar to a kolsch but not exactly bjcp guidelines, as kolsches are supposed to be more on the dry side than the sweet side, if I remember correctly...

    Flavors from Cedar Aging

    I cedar aged a gallon of pale ale that I made and it made it extremely dry and sort of musty flavored. I may have done it for too long. Maybe this was just my experience, but I'm guessing cedar isn't going to impart citrusy flavors.

    Thanks! This is the kind of advice I was looking for. Maybe mash at closer to 154? What is your reason behind moving the hops to 5 and 0 instead of 20?

    That's sort of the problem. I LOVE cal commons. Normally they have big full malt flavor and exactly the right bitterness flavor, aroma. I was really excited to make my own cal common! But this just doesn't taste right. It tastes thin, but I'm confused as to why since my OG was over by a ton...

    Dang. A day late and a dollar short haha. I boiled the hops and water last night, and then put it in a French press to remove all the sediment. I threw it in my beer today. I ended up just doing straight water, but dropping the pH and adding some extract is a good idea. Hopefully I won't...

    do you think i could just boil hops in a quart of water for 60 minutes and add that? its a 5 gallon batch, so i dont think adding a quart of water would make a huge difference as far as watering it down. and as far as my whirlpool IBU, I will definitely calculate it as 0 bitterness from now on...
