    Fermentation ran away to 80F

    Honestly my experience tells me it's not going to taste great, for a while... Before I started controlling ferm Temps I had a few hot ones, and they were not good. After a while (few months) the off flavors seemed to mellow.

    From reading your hop addition schedule, it doesn't seem like you are adding any "flavor" hops. It's not surprising to me that if you aren't using different grain bills, and you are using the same yeast, they would all taste the same. They may smell different based on all the late hops you are...

    I haven't gotten this right yet...everytime I do it, the beer is overcarbed and foams like hell when I go to serve it. I like to set it and forget it for 10 days or so, always carbs perfectly.
