The FAQ's on the web site http://www.brew-boss.com/category-s/115.htm show the grain loads and water requirements. The heater will definitely be covered and is not an issue but the main concern is making certain the grain is covered. The chart on the FAQ's shows what is possible.
Simply add a step type 1 to your step definition file. It will wait for you to press start, effectively pausing. Make sure the temperature you want held is specified for the step.

Price wise you need to compare the BIAB version of Brew-Boss with the HG system. Comparing the COFI is apples and orange comparison as the HG system uses a bag. The Brew-Boss system is almost the same price and provides the automation as well
