I had to substitute German Pilsner for the American Pilsner. Any thoughts on how this may affect this recipe?
I plugged everything into Beersmith and it's telling me the ABV is gonna be 5.9%. Seems high and definitely more ABV than I'm looking for out of this beer.

Ok. Any ideas as to what would create so much trub? I've made this recipe before and didn't experience this. Also, do I need to wait for that to fall to the bottom before bottling/legging?
This is my fifth extract with steeping grains batch (a repeat recipe) and this one has an odd film on the sides of the carboy. Has anyone seen this before?

When you say to do late extract additions as well do you mean to split the extract amount, add 1/2 at the beginning of the boil and the other half late in the boil?

I have used a couple of kit 5 gal recipes. The instructions required 2.5 gal to be boiled and then top off to 5gal in in the primary fermenter. I am looking at recipes on hopville.com and their 5 gal recipes have pre-boil wort volume at 5.8 gal.

So, first time using leaf hops.....filtering from kettle to primary fermenter didn't go so well. So I had to end up transferring all of the leaf hops into the fermenter. Will this effect my end product (a honey IPA)?
I can remove them in 7 days when I transfer to secondary/dry hop. Or should I...

Keystone, you're exactly right it is a Belgian Saison! Were you able to determine that just based on the expected FG being that low?

Have a friend who used a kit. They were in target with their OG of 1.05. FG was supposed to be 1.10. Their reading for FG is 1.005. I am a beginner myself so I'm wondering if this is normal and what may cause the FG to be below the stated FG and also that close to 1.0?
