Quick question. I have a pack of liquid ale yeast(1028) packaged on 11/6/2013. I want to do a 11 gallon batch this weekend of a gravity of 1.042. Beersmith says i need a starter with 2 yeast packs. what is the best way to use only one pack. Is it to make a reaaalllly big starter tonight then on friday decant and pitch with slurry calculations, or is it something different?

I saw a really good talk on You Tube at NorthernBrewer by a guy from WYEAST. He described how to determine pitch rate base on *Plato but had a easy conversion to SG. After seeing it I really understand how important pitch rate is. Ck it out: [ame]http://youtu.be/lEkwp_2Yezo[/ame]
