I was just given a large amount of Mulberries. I'm going to make a batch our wine and I will have a lot left over. I'm thinking they might work in a Saison but I've never tasted a mulberry yet alone brewed with them. What are your thoughts? How many pounds per gallon should I use?

I did a mead , not much flavor but a beautiful ruby color. Very sweet I'd use 5 lbs in secondary, freeze them first. My procedure is to cull them for leaves and under ripe fruit, then put in mesh bag, dunk in sanitizer, let drain, bag and freeze. Do this on brew day and put in secondary. There is a lot of sugar and there might be a blow off, I use 6.5 gal carboys for fruited secondaries.
