I am not able to locate torrified wheat any where near me. But I do have an unopened bag of puffed wheat. Ingredients list whole grain wheat and nothing else. Is this really the same thing? There is no husk on it if that matters.

I can take pictures when I get home from work.

If it is torrified wheat do I mill it before mashing? And will a cereal rest be needed? I'm only wanting to use a very small amount for head retention.

It's not exactly the same but you could sub for the torrified on an equal weight basis. Puffed wheat cereal is a lot more "puffy" than torrified wheat and torrified wheat may have a bit more toasty flavor. Torrified wheat does need to be milled before adding to the mash, puffed wheat being so soft can probably just go in as is. A prior cereal mash is not necessary.

Hmmm I plan on serving this beer to everyone at the company I work for. They have come to expect better than craft quality from me.

Has anyone actually used puffed wheat like this? Its for a Kilkenny style red/cream ale. I want a nice thick head after going through my make shift sparkler tap. Should I just use some flaked barley or oats instead? Srm will be 16 - 20. I am going for irish red meets stout.
