Been there, done that. See thread below (lots of good info in there). The key is to stop fermentation early. Easiest way is to taste daily until it's how you like it, then put in fridge.

Bought this today at Aldi:

On the can it says they used fermented tibicos, and the can says it contains live pro biotics. So I’m going to mix up some sugar water and dump the can in put on an airlock and see what happens. If I get some fermentation going, I’ll add pineapple and mango and maybe some more sugar. Not really sure what the actual goal is, but it should be a fun project if I can get it rolling….
