So I am working on a saison to brew tomorrow.

Saison- Little Ry Spelt wrong
IBU; 30
SRM: 4
OG:1.0429
FG:1.008
ABV: 4.8

Belgian Pils 63%
Rye Malt 13%
Flaked rye 4%
Spelt 17%
Flaked wheat 4%

Pekko 60min
Pekko 10min
Mandarina Bavaria 10min

WLP585 Belgian Saison III Yeast - starter been going 48 hours

Mash @148F

Got the Idea after reading @themadfermentationist arcticle for a Spelt Saison and decided to change it up a bit. http://www.themadfermentationist.com/2012/08/spelt-it-right-saison-recipe.html

Need to check the AA on the Bag to get the amount of each hop but it's to target 30IBU.
 
I do a saison with about 15% rye and I love it. It ends up finishing a little higher than some saisons, but it's still pretty tasty. I also use 3724 though, not sure how 585 compares.
 
3724 and WLP565 are reported as DuPont strains, whereas I don't know where WLP585 is from I saw I blog mention it was Non-DuPont., high fruit esters. Others have reported light tartness and a bit peppery.
I was thinking of 2 days @68 then ramping up to 75
