I'm going to be racking my honey kolsch off its yeast cake. It's currently sitting on Danstar Nottingham. I want to make a honey brown. The same type of yeast is used. I've yeast washed and done similar to this. Thoughts??:mug:
 
The whole cake is an overpitch. I'd check Mr. Malty for a proper pitch rate for slurry and measure out an appropriate amount of slurry to pitch, and then put the rest in mason jars or beer bottles and refrigerate it for later reuse.
 
Going light beer to dark is fine to pitch onto. dark to light can be problematic. I always pull the yeast to measure the amount so I don't overpitch. If you figure your trub percentage right you won't need to rinse the yeast of you brew the day you package.
