Need some insight on what to look for. Brewed 2 IPAs and they both came out at 1.010, I was shooting for about 5 points higher. First one was mashed at 152 and the second 154. First one was S-05 and the other S-04. Both are kegged and not ready for consumption yet. I've read that S-05 gets down there but thought S-04 didn't have the same reputation. My hydrometer checks out but I don't have another thermometer to check against but it seems to be a-ok.

Both samples tasted great (but sharp) and I'm not worried, just trying to figure this out before my next batch.

Was there any simple sugar in the recipe? Also, is your thermometer calibrated?

No sugars. Thermometer is not calibrated but appears to be accurate.

Yeah, sounds like your thermometer is outta wack. I dare say, an accurate thermometer is one of the most important items you will need for AG brewing.
