How close is close enough? (FG)

Hi all,

I am hoping to bottle my first batch this weekend and was wondering if it will be ready.
Here's the scoop...

Luckily for me, I found this site before brewing, so here's what I did:

-Started with 2 1/4 gal of water to boil.
-When boiling, added the 2lbs of DME and the hop pellets
-Returned to and boiled for 15min
-Added can of Hopped LME
-Returned to and boiled for 15min
-Hydrated my dry yeast in preboiled (and cooled) water
-Water bathed the wort to 77deg in less than 30min
-Added 3gal of preboiled and cold water to the primary bucket and shook the heck out of it a couple of times (prob 5min total)
-Violently poured the wort into the bucket
-Hydrometer OG reading was right on at 1.044 at 72deg
-Pitched my hydrated, bubbling yeast
-Put the bucket in my basement where it was about 60deg
-After about 12hrs, was fermenting like crazy and the fermometer was in the 66deg range, this sort of activity continued for at least 36hrs
-Still had good airlock activity after 3 days or so
-Moved the bucket to a location where the temp was 64-66deg and has been there since


-Took a gravity reading last night and came up with 1.016 - almost exactly 2 weeks from pitching
-Plan on taking another reading tomorrow night to see if it has changed

If it hasn't, can I assume it's 'done' and bottle this weekend (just short of 3 weeks)?
Even though it didn't get down to the expected FG of 1.010-1.012?
(I spent a good part of the day in the "1.020 Curse" threads)

Would it do any good to move it to a location that is more in the 68-70deg range?
I'd also assume that this is the location that I want to put my bottles for the 3 week conditioning?

Yes if the gravity it's that low and stable, you should be ok to bottle. So...

Yes you are more than likely ok to bottle this weekend. I would.

And yes, store bottles in that 68-70 area for two weeks.

Two more weeks in the fridge (i find best), and you are ready for a friday night.

Sounds like you did your homework. Congratulations, you have made beer. Get the next one going soon, so you build a pipeline. Makes the waiting easier.

Also, consider a kit with specialty grains to steep, and more hop pellets instead of hopped LME. Easy changes, and it will improve quality.
