I'm trying to put together a recipe for a pale ale "dry-hopped" with green tea leaves, and I'm trying to come up with the right hop schedule that won't overpower the tea. I was thinking Centennial or Amarillo for bittering, and maybe Sorachi Ace for late additions and dry-hopping. I thought the lemon notes might work well with the tea, but I'm afraid it might be a little too aggressive. Has anyone brewed something similar? What did you use?

I wouldn't waste Amarillos for bittering. Bitter with anything, then I think an Amarillo/Sorachi flavor and aroma combo with a Sorachi/Tea Leaf dry-hop would be good.

Good point. I picked everything up today, aside from the tea leaves. I'm hoping to have time Sunday for a brew day. We'll see how it goes!
