Honey is more or less highly fermentable glucose and fructose with some proteins derived from pollens.
If you add hops to the water-honey mixture for bittering, you need to pay attention to the mix ratio and acid bittering level of the hops. This is called the BU:GU (bittering unit to gravity unit). A measure of .5 is balance between bitterness and sweetness.

Honey is generally an expensive way to increase gravity and ABV. It will "dry" and thin a brew out unless there are some unfermentables in the recipe. In a mixed drink there is no starch conversion so "hop honey" will simply add color, sweetness, bittering, and floral/citrus/pine/spice aroma depending on the hop variety.
Not all hops are created equal because the varieties will differ in aromatic oil content and bitterness, so choose your hop wisely.
