Critique my recipe please-- Pale Belgian with Chamomile

Hey All,

I came up with a funky recipe for Spring/summer, kind of a spinoff on a recipe I saw on another thread. Thoughts and critiques are encouraged!

5.00 lb Belg Pils Malt (2 Row)
3.50 lb Belg Wheat Malt (2.0 SRM)
.5 lb Honey malt
1.25 oz Cascade (60 min)
0.50 oz Cascade (10 min)
1.00 tsp Flour (wheat) (Boil 5.0 min)
2.00 oz Chamomile (Boil 60.0 min)

1.00 lb Honey (1.0 SRM) --------------(considering flameout or after high Krausen)

1 Pkgs Blegian Ale Yeast (WLP0550)

Mash Schedule: Single Infusion Mash, 156°F.
 
Have you used honey malt before? People have very strong opinions about it - either love or hate. I would recommend 4 oz for such a light beer. A little goes a long way.

Also plug your hop schedule into a calculator, I'd suspect it'd be more bitter than you'd want it as written; you could switch the amts and do 0.5 @60 and 1.25 @ 10

Otherwise looks good. Love that yeast. I would add the honey during chilling...warm but not boiling wort
 
I have used it once...I think you are right about loewring it though.

I also like the idea of switching the hops, didnt adjust that from the original recipe...maybe ill break it down to:
.5 @ 60 min
.75 @15
.5 @ 10

in this seemed to increase the perception of honey.

I only use noble hops in my Belgians but that's personal preference.
2oz of chamomile is an awful lot (56grams).

I used 0.5 grams in my Wit and even that came through
