I've never done any wild beer of any kind, but I have this beer I made mid-August that I haven't even moved from the primary. I had a sample of it that was too "hot" and had unpleasant esters, and I kind of just lost interest in it as a "I'll bottle when I feel like it" type deal. Assuming autolysis for being on the yeast cake for that long has not completely ruined it, I'm not thinking I could experiment with this one by adding some bugs. Was thinking some Brett, oak chips, perhaps some kind of fruit puree, maybe some dry hops far down the line closer to bottling. I was curious if you all had some suggestions for what I could add. Also, should I bother moving to a secondary at this point?
