    Hola ya'll, long time no post... Made landfall recently in the Galapaglos (sailed from Panama). The local "Endemica" craft brew brand aint bad.

    Making vinegar from beer

    There is no obvious visual clue, but 30 days should be plenty. Acetobacter will continue to live in the vinegar after initial fermentation is complete, that's why you continue to see mother production....and why you can use existing unfiltered vinegar to inoculate a new batch. Vinegars age...

    For situations where you may not have access to an oven, bread can be made in crock pots, pressure cookers, dutch ovens, etc. I spend a lot of time on boats and its more common there.

    Barrel Aged Milk Stout by Casa Bruja ("Witch House") brewery, Panama. They do a lot of interesting/experimental beers.

    Alcohol sales are suspended here in Panama. In a crisis you gotta drink what u got...so we tapped into this batch last night. Its a little sweet, but quite tasty.

    This flour blend makes for a tasty, but dense, loaf. My try it again with about 10% lentil (we like the flavor) and see how that comes out.

    Recent tasty experiment. Dough about 70% GP, 30% Camote (sweet potato) flours...because thats what we had. Gives a slightly sweet taste to the dough. Not our favorite, but good. Toppings were mostly left over from the previous day's Mexican food. In CV lock down so cant just pop out for more...
