Forgot to add oxygen. Can it be fixed?

I made a Maibock. OG not too high 1.07. But I forgot to add oxygen. It's been fermenting for about a week now, and it's not going down much. I know it's a lager, and it is cold, but I fear it's going to get stuck if it hasn't already. Will adding oxygen now ruin it? Can I just add more...

Do you make beer for you, or for others?

I made a sort-of Sapporo knock off, just with more flavor and body. I like it a lot and I'll drink it with most any asian food. I offered to give my son some (he's 22) and he said no thanks, he didn't like it that much. I made a honey orange Kolsch, and I tried it last week. Don't really...

No yeast for a week. Is it ruined?

I'm not really a nub, but I"ve never had this happen. I had made a starter for my Maibock a couple of weeks earlier, and let it sit in the fridge until I got ready to brew. It was a big starter, but it grew just fine and was only a couple of weeks old. But I brewed last week and pitched the...

    Sous vide pastrami

I'm gonna try something different. I have a pastrami curing in the fridge, and I'm going to smoke it for a couple of hours, then put it in the sous vide for 2 days. Should save a bunch of money on wood, but more importantly it might end up more tender. On the other hand, it might not be...

    Sous vide recipes?

I used the electric BK with a PID to sous vide 5 steaks over the weekend. I didn't take pics (sorry!) but I will say they looked awesome! Perfectly medium rare from one side to the other every bit of meat perfectly cooked with only the very thinnest layer of browned meat on the entire outside...

    Wow, do I love electric!

I finally got the electric system together enough to brew a batch. I don't have much of a control panel - just a PID, an SSR, and a temp sensor with power in and out. And I don't have the HERMS setup yet. Just an electric HLT, an igloo MT, and an electric BK. But boy oh boy, this was WAY...

Help on which SSR to order?

My SSR is broken and I need to get a new one, and I want to make sure I have the right one. This is the one I thought to get: http://www.amazon.com/dp/B005KPIX9A/?tag=skimlinks_replacement-20 Will it work with a MyPin PID? Is there much difference in SSRs other than voltages and amps?

    How to connect a thermocouple?

I have this PID. http://novapcs.brinkster.net/novapcs/PC7/PC7-pid%20temperature%20and%20k%20thermocouple-1.jpg With this wiring diagram: http://novapcs.brinkster.net/novapcs/PC7/PC7-pid%20temperature%20and%20k%20thermocouple-5.jpg So, I'm confused as to how to connect the two wires of the...

Favorite line from a TV show

What's a favorite line? Mine all tend towards comedy, but whatever you like. Doesn't have to be the best line of all time, just one that you thought was great.

What value does a contactor add?

I have a PID controller that accepts 110 input, and will power an SSR. I haven't bought the SSR yet, but I did buy a couple of contactors. Looking at Kal's build, there isn't a contactor in it, but I see sometimes people use them in series with the SSR. Why? Won't an SSR drive a 5500W...

    When to add zest?

I want to brew a beer with a pronounced orange flavor. Most Witbier recipes say to add orange peel late in the boil. The blood orange hefe says to put oranges in the fermenter. How do you think I can get the best orange flavor - from late in the boil, to adding zest to the secondary...

    Do second harvests happen?

I have first year Santiams, and about a month ago I got about 6 cones off one plant. (yay) But then I fertilized the plants and they started growing some more - probably went up another 2-3 feet, and now I have new burrs at the top. Not many, but 5-6 more. Do plants often (or ever) make a...

    POLL: What do yeast do?

My first poll, but I have to know, because I think I've had it all wrong all along!

    Fermentation/lager chamber

Hey, I just thought I'd share the lager chamber project. I needed to make it big enough to hold the conical fermenter (for fermentation) and also to hold several cornys for lagering. It'll all be cooled by an A/C unit in the side. I hope the AC can power this big of a chamber down to 35 or so.

    Anyone done a hopbursted lager?

I need some advice here. I've only been brewing for a year, and I know there's a ton of experience here, so I'll freely admit I don't know what I'm doing. I love lagers. I want to try a really hoppy beer with as little bitterness as possible. So, has anyone made a lager with only late hop...

Having a hard time with bittering

I use BeerSmith to help me calculate amounts of hops for bitterness according to style, but I want to try skipping the bittering (early) hop additions altogether in favor of more late additions. The problem is, BeerSmith says that you get 0 bitterness from hop additions at flameout, but I don't...

    Cereal mash temperatures in BrewSmith

I need to do a cereal mash as described in Palmer's "How to Brew", but I'm having trouble putting the steps into BeerSmith. With 2.5 lbs of corn, I need about 7 qts of water (and a pound of malt). But then I need to calculate the temperature the remaining mash should be so that when I add the...

Question about FWH for a long boil.

I really like first wort hopping - it seems to me to provide a smoother bitterness. I also like strong beers, so I need to do a long boil. So my question is, if I FWH while sparging, but I don't want to isomerize beta acids, can I just remove the FWH hops after an hour and keep boiling? Are...

    Tangerine Witbier is sour

It's not unexpected, since all the sugar from the tangerines fermented out, leaving only the sour acid and some tangerine flavor. But wouldn't it be better with a touch of sweetness? Does anyone add lactose to the blood orange wit or something similar to cut down the sourness?

    Lots of foam, no carbonation

I made 2.5 gallons of rootbeer from extract and put it in a keg to force carb it. I set the pressure up to 25, and left it for two weeks at 35 degrees or so, and now when I pour a glass it's completely foam. Once the foam dies down, the root beer itself is flat. Is the pressure not high...
