    What is this foam?

    This is an Octoberfest lager I brewed 11 days ago and it fermented vigorously at 50 degrees for a week and then I raised temp to 60 degrees for diacetyl rest for 4 days. I think krausen has dropped but I have never noticed foam like this in any past brews. I rarely brew lagers but mainly brew ales.

    How long will beer stay fresh in a corny keg?

    Over attenuated?

    I just did a FG measurement of my first Kolsch fermented with White Labs WLP-029. My OG was 1.048 and FG 1.006. Both measurements were with a hydrometer at 68F. If it is over attenuated, how will it affect the taste?

    First stout, worried about over-pitching!

    Question about "mash-out"

    If a recipe calls for a 10 minute mash-out at 170 degrees and it takes 20 minutes to get from 152 to 170, do you then start the 10 minute mash-out countdown once it reaches 170? Maybe I'm wrong, but isn't 30 minutes before sparging too long?
