    The calculators all placed my ph slightly high for the mash with the given salts, but only at about 5.62-5.7. That's why I added the modest addition of 2ml of acid.

    Going to brew a belgian strong with rose hips with this. What is the ideal fermentation/Pitch profile for this yeast? I want to maximize the spicy characteristics but avoid bubblegum. I have temp control so can ramp up as needed.

    Grainfather!!

    I really want an inline thermometer for my cf chiller, but mine fits 1/4 inch threads, not 3/8. I can't even use a thrumometer, as the supplied hose is less than 3/8 ID. This means I'd have to reduce from 1/2 to 1/4 inch, so no thermometer probe will be long enough. Any ideas?

    You might be right there. I figured a Belgian dubbel with a half pound of candi sugar would be safe from that (used t 58 on that one). So if I pitch a half packet, what do you do with the rest?
