First time using 22 oz bottles, question about sanitization

So I'm about to bottle and I've run my bottles through with the vinator and getting them on the tree to dry. As I'm stacking them into the pegs I notice that the 22 oz bottles catch a small amount of sanitizer just before the base of the neck. Is this something I should be concerned about...

No yeast activity for 36 hours, what to do?

First time making a stout. Used an extract kit from brewers best. Used a dry yeast that wasn't kept chilled but the room it was in never got above 72 degrees. OG was 1.042 and its currently sitting around 64 degrees in primary in the basement. At what point should I consider that the yeast...

    shelf life of dry yeast?

I'm wondering if I should get some new yeast for a batch I'm about to brew. I was given a home brew kit back in june with an irish stout recipe inside. I didn't want to brew that one until I had a few under my belt and it was a bit colder outside. Was going to brew tonight and I noticed the...

Uneven distribution of priming sugar in 5 gal batch

So I opened the first 5 gal batch I've done, a nice pumpkin spice ale brewed in the middle of November. The flavor turned out really good, although some of the bottles in the batch are very undercarbed while others are just fine. My only guess is that the priming sugar didn't mix evenly in my...

Best way to clean a copper immersion chiller?

My guess would be to just wash like normal on outside post use and run some star san through it. Any issues with doing this?

rice hulls and pumkin ale wort questions

I'm looking to do a pumpkin ale and I see that using rice hulls can help with the fermentation since there can be a lot of trub from the pumpkin. So I have to ask, do the rice hulls just keep the trub somewhat separated to allow more liquid through it? If the rice hulls are worth it, is 1...

    Questions about pumpkin ales

I've been wanting to try one for a while and I read different recipes ask for actual pumpkin to be added, while some don't bother with it. Just curious as to what are the pros and cons to add pumpkin to the brewing process or not? Anyone have any insight?

Opened the first batch tonight and...

...somewhat disappointed. The taste has a sharp bitterness to it, and something just seems off. I boiled off a bit more water than what I should have, so instead of a gallon recipe I ended up with about 3 quarts. FG was 1.021, a bit high but I chalked it up to the beer being a bit more...

    Suggestions for bottle storage?

I'm pretty new to brewing and I enjoy DIY projects, so I pose a question. What do most people tend to use for bottle storage? I would love some ideas and even making something from scratch isn't out of the question. I've seen plastic milk crates but I'm not sure if i want to go that route So...

    New found free time equals....

Took my nursing boards yesterday and what do I come home to today? Nothing other than a decorated bottle tree! The wife is good at subtle hints. Well this and the Irish red ale kit that now sits on my desk. Looks like I'm brewing tonight!

    Infection or something else?

So a week ago I took a specific gravity reading on one batch while I was bottling one. Had no issues with sanitization that I know of, it hasn't been an issue this far. I went to check another reading today to see if this batch was ready to bottle and I came across this. Last week when I...

Any issues with caps that look like this?

I noticed after capping that the caps themselves had a small circular dent in the center from the capper. Pulling the handles down to cap the bottles was simple but I notice a bit of resistance as I lift the handles and take the capper off the bottles. Seems like this dent is from the center of...

Looking for a clone recipe for sam adams pumpkin ale

I posted this in the extract brewing page but I think this would be the better post location option. I'll copy the post made in the other thread I am a big fan of most of the Sam Adams brews, the seasonals in particular. Last year the pumpkin spice ale they had in the fall was fantastic. I...

Suggestions for a pumpkin ale for the fall

I am a big fan of most of the Sam Adams brews, the seasonals in particular. Last year the pumpkin spice ale they had in the fall was fantastic. I couldn't keep any at the house for any extended period of time so I'm looking for something that I can make here at home. Has anyone tried that...

Question about steeping grains and brew color

So my first two batches look quite darker than they should be. I wonder if while steeping the grain if I agitated the bag too much. Do y'all think this will be an issue for changing the taste of the finished product?

Time frame for racking to secondary?

Just wondering what the general concensus is on the subject. I've read a week after and also read once the bubbling stops you can transfer. I started a batch on thursday evening and haven't seen much action in the airlock all day today after it having a constant bubble every second or two...

OG is too high from loss of water in boil

I finished brewing a 1 gallon recipe and I boiled off a bit more water than I expected to so the volume of my wort was a bit less than a gallon. The OG reading i took when put into the primary was 1.172. My question is when i tranfer the wort into a secondary in a couple days can I add a...

Is a 2gal bucket too much air space for a 1 gal recipe?

Just curious for 1 gal recipies if a 2 gal bucket is too large for a primary fermenter? Seems like the less air space means less chance of getting unwanted bacteria into the wort. What are y'all thoughts?

    Temperature control in basement needed?

I've been reading that temperature control during the fermenting is huge in quality of the finished beer. My basement is most likely where I will store the fermenting beer, but I have to wonder if the temperature is too cool. My basement tends to stay around 67-68 degrees. It's been a while...
