Cellaring beer, what's the point of diminishing returns?

Hi everyone, I have been collecting and sitting on some of my local (Michigan) beers and am interested in finding out what the point is where I should just drink it because it won't get any better, or it will start going bad. I know most Brett bers are 3-5 years at their best, or so I've heard...

    Using old hops?

We moved, I left them with my other homebrewing equipment when moving and didn't remember to put them back, moved again into the house a couple months ago and found them buried in a box of hoses, siphons and airlocks. They smell fine so I'm going to use them, we'll see bkw they turn out. BTW I...

    Economical 40 quart brew kettle?

If you do go with an aluminum pot, I would endorse the one in the link below - Have had it for 3 years and have not had any issues with it. The bottom is fairly thick, I have not had issues with scorching my wort with the SP10 burner. Again, aluminum vs stainless is an argument that will go...

    Using old hops?

Hi everyone, it's been about 2 year since I brewed, but now that I'm not in school, have a house and time, I'm jumping back in. I had previously bought hops by the pound from Hops Direct, and have 2 bags left. They were both left at room temp for the last 2 years, a pound of Chinook that is...

Help with priming/yeast addition to a big barleywine

Hi everyone, it's been a long time since I brewed, and I've had a sour and a big barleywine going for 16 months now, and I finally am getting around to bottling tomorrow. However, the last barleywine I did was so flat it could hardly be called beer. This time, I am planning on putting in the...

    Albany breweries?

Hi everyone, I'm headed out east for a wedding very soon and an going to be stopping in Albany for the night. I'm just wondering if there are any exceptional breweries in town or even any companies that distributes really good beer that I can't get here in Michigan. Thanks in advance, cheers!

Imperial peanut butter cup brown ale

It turned out pretty much as I expected, the only thing that is a bit more abrasive to me taste wise is that I would reduce the amount of cocoa added at 7 days, maybe from 2 oz down to 1, it's very heavy on the cocoa, and not necessarily in a bad way, just comes across "dry", kind of like the...

Imperial peanut butter cup brown ale

Update: Alright, it's in bottles now. FG 1.032 - assuming the .07 variance from beersmith's calculated FG in at least some part due to the peanut butter and cocoa powder added after initial fermentation. As I figured, the peanut butter absorbed a lot of liquid and because of this, roughly a...

Such a peculiar off-flavor. Need help.

yeah, the OP probably would've tossed the batch after the second bottle made him sick if the first didn't send him to the hospital. I can't think of anything that would go from batch to batch and get into mead and beer though. I guess now that I think about it the first batch of mead I made...

Anyone ever brewed with pine needles?

Hi all, excited that summer is here and looking to make a few brews before school starts back up. I ran across a cool thread about simple syrup made with pine needles, and I was thinking about trying it out for a test batch, either using just the pine needles as an adjunct added to primary (I...

Such a peculiar off-flavor. Need help.

Any details? Where do you store your fermenter, what yeast strains, what do you use to sanitize, did you have any additions (dry hop, adjuncts into primary/secondary) etc? Doesn't sound like it would be an infection, but if it's confined to batches coming from one fermenter, I'd toss it...

Imperial peanut butter cup brown ale

Just added the last of the PB2, same method as with the cocoa powder/PB2 before. Haven't taken a gravity reading just yet but will soon and will keep updates as they happen.

Imperial peanut butter cup brown ale

UPDATE: Exams got in the way and threw my schedule off a bit, but here's what's going on with the brew. Just added my slurry of PB2 and baking powder, but I changed the measurements from what I had initially posted. I want this beer to be over the top chocolate and peanut butter, so I doubled...

    Is my homebrew overcarbed?

As to the oversweetness you describe, do you know what your final gravity was? If you had excessive residual sugar and then added more at bottling, that would explain your "too-sweet, too-carbonated" beer.

    Is my homebrew overcarbed?

You will KNOW when it's overcarbed. Depending on the style, you may or may not have overcarbed it, but I had one batch that I called volcano ale because they did the whole coke and mentos thing as soon as you opened them. Use one or even two carb calculators and then average the two, that's...

    Best southern brews?

Leaving MI on 5/28, staying in or around Nashville that night, down into MS the 29th to Jackson area, Brandon I think. There for a couple days, then leaving the 31st for New Orleans and staying there for 2 days, then leaving the 3rd and headed back (playing it by ear on the way back, not sure...

    Foggy and greyish beer?

As long as you boiled after you mashed, you should have no problem with the mold. That being said, you may want to hit it with some star san in a spray bottle, it never hurts. Even though you didn't Vorlauf, that shouldn't be an issue unless you poured everything from your kettle into the...
