I tried a half apple, half blackberry juice mixture and I thought it came out quite nice. I would do it again.

an Alt way to get sweetness in a carbed cider

I look forward to the S04 results. I don't have measured results, but from taste, a similar experiment with half apple juice and half peach juice produced a sweeter than expected cider.

    Crispin Artisinal Reserve Clone?

After having The Saint, I tried a batch of cider with WLP500 yeast and it's certainly a similar flavor, ignoring the sweetness difference. I usually add some cane sugar to my batches, substituting maple syrup would be an obvious step to get a closer flavor.

    WLP500 my new favorite yeast

I've made cider with probably 10 or so yeasts so far and I have a new favorite. White Labs WLP500 is really nice, give it a try if you like Safale S04 or Nottingham Ale. It's similar to those 2 except it seems like it leaves more fruit flavor and produces less lees.

    Sour cider... Every time!

When I used to use either apple juice concentrate or juice made from concentrate, lots (half?) of my batches came out sour. Since I switched to juice not from concentrate (I use Tree Top 3 apple blend), I have had no sour batches. I would suggest you try some quality apple juice.

Caramel Malt in Cider Side-by-Side Experiment

Huh, I recently did something very similar. 4 gallons Tree Top 3 Apple Blend S04 1/4 lb Honey Malt 1/4 lb Crystal 60 Used about 3-4 cups of water, steeped crushed grain at 160 for 1/2 hour. Removed grains, added 3 cups sugar and boiled. Added to apple juice, pitched yeast and fermented...

I would suggest you avoid using concentrate as your only juice source. Try some juice that's not made from concentrate. Frank

    Types of juice for cider

I just did an apple/strawberry, it came out nice. The strawberry flavor is there but in the background. My favorite is peach/apple, really great. I've also tried blackberry/apple and liked it. Frank

Hot Climate Brewing whilst avoiding divorce

If you can get TreeTop 3 apple blend, not from concentrate, I recommend it, the flavor is quite respectable. Frank
