Does it still need to be dry-hopped? If so, I'd just proceed as normal, relax and think happy thoughts. If its just going to sit in there for a few weeks not doing much, I'd go ahead and bottle. 3 weeks in primary is plenty for an ipa. Ohh, if you just racked it and have sediment you don't want...

Well, I don't think you can go anywhere near wrong with a combo of any of those. Late-night-half-drunkenly-concocting me would like to smell 1oz Centennial, 1/2oz Citra, 1/2oz Simcoe on that beer though. 2 oz on 2.5 gallons should put a good stank on it :ban:

Doing single malt/single hop beers is a great way to get a better grasp on the qualities of individual hops. I enjoyed most of their beers, and was sad they had to close (not sure of the exact reasons that happened).......but whatever I drank that day was hot garbage. It may have been some sort of one-off, as it was at a private party not at a bar or at the brewery.

Agree with pretty much everything said. Bitter with Columbus only. The only other advice, if you want a fifty/fifty ratio of flavor/aroma I'd adjust to something like 60%columbus/40% citra or 65columbus/35citra. Citra, in my experience is a lot more potent flavor/aroma wise and can easily...

A light belgian (maybe the pale?) from Craggie (a since closed Asheville brewery). While some of their beers were not bad at all, this one was horrible. Smelled like circus peanuts. It was disgusting. Uggggghhhhhhh....circus peanuts. Close second was a porter I had from Thomas Creek that smelled...
