I don't have measured results, but from taste, a similar experiment with half apple juice and half peach juice produced a sweeter than expected cider.
After having The Saint, I tried a batch of cider with WLP500 yeast and it's certainly a similar flavor, ignoring the sweetness difference. I usually add some cane sugar to my batches, substituting maple syrup would be an obvious step to get a closer flavor.
I've made cider with probably 10 or so yeasts so far and I have a new favorite. White Labs WLP500 is really nice, give it a try if you like Safale S04 or Nottingham Ale. It's similar to those 2 except it seems like it leaves more fruit flavor and produces less lees.
When I used to use either apple juice concentrate or juice made from concentrate, lots (half?) of my batches came out sour. Since I switched to juice not from concentrate (I use Tree Top 3 apple blend), I have had no sour batches.
I would suggest you try some quality apple juice.
