    Brewing this again tomorrow. Adapted the recipe slightly as ive found it finished a bit high the last 2 times i brewed it so hopefully a lower mash temp and a bit less crystal will combat that. Looking forward to it being in my christmas line up as i havent brewed it in a while

    Yeah mines still bubbling quite a lot, as in bubbles in solution but seems to be slowly clearing out. No pelicile at the moment. Interested to see what the difference is on the second generation. Might be a bit impatient with 1 demi john to see how it tastes young too

    I got a batch on on Saturday using 616, fermentation was visible very quickly and then went nuts yesterday. Yeast head had subsided but is bubbling like nothing I've seen before. Looking forward to this 1. How long are you planning on leaving it to age?

    Brewing a porter tomorrow with a small amount of smoked malt in the grist to see if i can replicate the flavour of when malt was kilned over open fires. Only 1% in 25L but its a starting point, nothing to over powering. Going to mature this a long time

    When the gravity is stable across 3 days your beer should be done. As its lost a point per day, the yeast are still happy chomping on the sugars.     5 days is too early to make any decision. Leave it 3-4 weeks, taste it at bottling or kegging and make your decision then. Theres loads of bi products from fermentation still in the beer. It should clean up. Once packaged, leave it a few months again for the flavours to develop and blend. I...
