Ran my first all-grain about three weeks ago and made a basic Heffeweisen with the crowd favorite Wyeast 3068. I hit my FG last Friday and bottled on Saturday. I noticed a relatively strong sulfur smell at bottling but figured it would condition out.
After checking a bottle today (carbonation coming along nicely), I was overwhelmed by the stink. The beer itself actually tastes good but I don't know if I can keep this batch if the sulfur doesn't tone down. After some additional searching it seems that most people say to wait for the smell to dissapate before bottling but I'm beyond that point now. Is there any hope? Can I wait it out?
