I brewed an IPA three weeks ago using Notty and today finally got around to dry hop it, when I discovered a potential problem..

When I draw a sample to day it smelled very yeasty?? (like sniffing to the rehydrated yeast or baking yeast) - It was also slightly present in the taste I think..

I'm sure I pitched a proper amount of yeast and have had good fermentation temps (1 week at 63 then 2 weeks at 68)

What have caused this off smell? Will it fade?
Would using finning agents + cold crashing help??

Check the gravity and see if it is where it should be. It should fade with time. Cold crashing should only help if yeast are in suspension.

Once the sugar has gone and arrived at the FG the yeast have done their stuff and will drop out, your beer is very green, uncarbonated, and not conditioned, wait patiently for hopefully a pleasant surprise, in other words to early for a taste review.
