I planned on brewing tonight but life got in the way. I've got a starter that is 48 hours old and at high kreusen right now. I probably won't get to brew for another 3 days now. What should i do with the starter? Keep on the stir plate? Stick in the fridge? Refrigerate and refeed the day before pitching?

I would let it finish doing it's thing, then stick it in the fridge until you're ready to brew. When you start brewing, pull it out of the fridge and by the time you're ready to pitch, it will be up to pitching temp. This is exactly what I did for my oatmeal stout a couple weeks ago and it fermented very nicely. Hope this helps.

I agree with Nukebrewer, I would just suggest feeding them a little bit of wort a few hours before pitching to get them ready to go. I do this every time I brew.
