Hi All,

I am going to be brewing a milk stout and want to hit an OG of 1.076 with Safale s04 yeast. I will be brewing a 20 litre batch. Does anyone have any knowledge on what a good pitching rate is? I plan to rehydrate my yeast before pitching...I'm wondering if I should use 1, 1.5 or 2 packs of the stuff. Any thoughts?

Also...as a side question, if my OG is too low, is there a good fix to this problem, such as adding DME?

Does the gravity you specify include the milk sugar (lactose)?

If so, I personally wouldn't include the gravity from it in my yeast calculation.

Maybe (1) pack is fine if this factors in your consideration.

If not, I would go ahead and pitch (2) packs.

Yes, adjusting your gravity with DME is fine.
