I recently started an LME brew. I used Safale 04 yeast. In the past my fermentation rarely lasted more than 14 days. This one has been going for 18 days. I am worried that the wort may go sour. I've been watching gravity but even so the air lock is still bubbling. How does yeast strain affect fermentation time?
 
It's not going to go sour unless it gets infected. With proper sanitation and an airlock, beer can sit months without going sour. Also, airlock bubbling doesn't necessarily mean it's still fermenting. Things settling could cause gas to release. Take a hydrometer ready a couple days apart. If they are the same, the beer is done.

Looking at the "kinetics" curve for this strain it's not surprising there's still residual activity at 14 days post-pitch.
Do the SG stability thing before moving on...
