So I have a bunch of yeast in my fridge..... Some is harvested and washed from past brews, some is still in the original smack pack. Both examples have been there for about 9 months as things came up time after time. Should these be fine if making a starter?? I don't see how they wouldn't but......
 
If you make a starter, you should be fine. The viability, over time, is questionable, IMO.
 
Yup make a small starter. If it seems sluggish, what I've done in the past is just let it finish, and step it up.
