It's been 6 months! brewing a citra/ pilsner malt SMaSH with 3711 Saturday. Shakes almost gone-

I'm brewing something very similar Saturday, I found this thread as I looked for what others have done with their saisons. My recipe is 12lbs Pils, 1.25 Opal (6.5%) for 60 minutes, 3711 yeast. Some coriander and seeds of paradise. I'll also be BIAB rather than traditional mashing and kegging rather than bottling.
 
FWIW it will be a better beer with just about any other saison strain.

What's your reasoning on the 20 min, 5 min addition? You'll get more bang for your buck with a smaller FW or bittering addition and using the rest at flameout.

Didn't realize that I bought 3724 until just now. Different than I wanted but it will do-
Any comments on 3724? I know it likes it hot but what about flavor profile compared to 3711.

RIMS kept it at 148 for 60 minute mash, then 90 minute boil. Whirlpool for 10 while cooling to 140 then rest for 10. Chill to 67 medical o2 with stone for 1minute and pitch 3724.
 
It rained in my wort today! And then, as I covered it I experienced first one, and then another, boil over. Still, I got a great smelling wort and hit my numbers.

Anyone posting in this thread is welcome to swing by in a couple months to try this on tap :)
 
Final gravity 1.008- kegged tonight @ 10psi

3724 stalled out at 1.034 so I put in the garage at about 90 for 2 weeks.
