Dear Fellow Brewers...
I was planning to make a late Summer/Fall ale with 5 kg. of Maris Otter and 1 kg. of Munich (4 gl.) and a whole lot of Mosaic (bitter/aroma)(i.e to try to get to know this hop)
However, some personal problems made me inactive for quite some time, and the question now is if this grainbill could be converted to a X-mas ale/specialty beer? I also have 500 gr. og Caraffa2 and 500 gr. of Chokolate malt to put in.
But will the Mosaic hop be too "flowerish" or complex for making such a beer?
