I picked up a pack of WYeast 1007 today and instead of a manufacturing date, it had a Best if used by date. This particular pack had a date of May 4, 2021. The retailer said he got it last week. Since today is November 4, the Best if used by date is obviously more than 6 months. Does anyone know how to figure the packaging date to calculate a starter?

By my math, it's six months? [edit] Ok, plus one week. So they round? [/edit]

It's actually simple, and confirmed by Wyeast: your yeast was born 6 months earlier than the Best Used By date.
I recently got my first couple of Wyeast packs with the new "dating" paradigm. Turned out it was two weeks old. Excellent!

There have been a couple/few threads on the topic, but the consensus is it doesn't change anything, you just have to do one more math step before using your favorite starter calculator :)

Cheers!
