We've been using this combo for quite some time now with excellent results for APA's and IPA's. I kind of fell into it when I made a kolsch early last year using WLP029. I built an IPA recipe and pitched it on the yeast cake from the kolsch. It was awesome. When I returned for more WLP029, my LHBS quit carrying White Labs. He suggested that the combo of 1007 and 2565 was essentially the same as WLP029 so I tried it. That sucked because it was two packs vs a single vial, but it's sure been making great beer. I split cakes often and get three 5 gallon batches out of one good combo starter.
We're even going to try it for a red ale pretty soon.....pitching onto a cake. I'm not sure we'll try an Irish red....perhaps a standard Amber ale. But who knows? Maybe an Irish will do just fine.
