I have a 3 gallon carboy that I would like to utilize for sours. I can scale down lambic recipes fairly easily with Brew Pal but had a question regarding pitching rates. Should I pour just over half of the vial, guessing roughly 3/5 of the liquid contents or just dump the whole vial in? Thanks.

No issues pitching the whole vial, but I actually like to pitch more than the ~10 billion cells in the White Labs souring blends. Some fresh brewer's yeast will ensure things get off to a quick start to fermentation.
