I picked up a Brewers best Scottish ale kit.

It came with dry pack of Danstar Windsor yeast. But I also have a white labs Edinburgh and a Wyeast English Ale sitting in the fridge.

Should I stick with the Windsor or would I be better off using one of the others.

I've used the Edinburgh yeast several times on my Scottish Ale, with great results.

I use 1728 which is the wyeast equivalent to Edinburgh when I do my Scottish Ales and it's a great yeast.

I know i'm a bit late to this party but i just started a Scottish Ale w/ Edinburgh. I threw it in the fridge to ferment (as the recipe called to ferment @ 40-50) and I'm getting no activity after 24 hours. I dragged the bucket out and am currently fermenting @ ambient (72.) My question is whether that's too hot to ferment for a Scotch ale? Or should i throw it back in the fridge after vigorous fermentation?

-thanks.
