When to Add Specialty Ingredients?

So, I've made a few meads, and a couple of those included fruit. But beyond that, I haven't used any special ingredients. My question is, when would be the best time(s)/places to add each of the following ingredients, and why?

- Cacao Nibs
- Cinnamon
- Vanilla Beans
- Chipotle Peppers

Secondary

You can pull them when they hit the flavor profile you like.

In primary you tend to blow the flavor out the airlock and have less control as to how much flavor you get.
